Formula 1 Dinner: Japan – Japanese Sweet Potato Cakes

Haven’t done one of these in a while so glad to get back into the formula 1 cooking spirit again.

Watched the race at 7am this morning but didn’t want to get up at 6 so I could make these so made them at lunch time instead.

This weekend it is sweet potato cakes based on a suggestion by Ben Pearson. Do I have a steamer? No. Do I have aluminium cup? No. I had a look at a few other recipes and then decided to make my own.

  • 2 Sweet Potatos (pealed and grated)
  • Egg
  • Chilli Powder and some herbs
  • Little sugar
  • Flour

The method is pretty self explanatory.  Mix it all together in a bowl and add flour so it isn’t too gloopy (sweet potatoes are very moist).  I wasn’t sure what they would turn out like given that some of the recipes I read resulted in a batter and others were definitely more cake-like.  These ended up like fish cakes, fried for a few minutes on each side they were lovely!
